Sustainably-sourced tuna, cold-smoked and served carpaccio-style with
lemon zest, olive oil, black pepper, parmesan shavings, baby leaf, and focaccia.

Yuzu and Fennel Abalone Salad :
Tender, locally-farmed abalone tossed in a zesty yuzu vinaigrette with shaved
fennel, radish, citrus segments, toasted almonds and baby greens.
Paired with: Seesteen Chenin Blanc.
Red Wine and Rosemary Karoo Lamb Ribs :
Twice-cooked lamb ribs marinated in red wine and rosemary, served with
herbed Parmentier potatoes, a caramelised onion and thyme purée, and
seasonal greens.
